Similar to the "vins doux naturel" of France, this wine is fortified with alcohol after fermentation has begun, but not completed. The wine is aged in oak barrels which are left in the sun to speed the aging process and add depth and complexity. Delicious flavours of orange marmalade, caramel and raisin have developed. Serve slightly chilled on its own or with a rich dessert such as creme brulee or cheesecake.
